Wrapped fish fillet
Being in the season of Lent, we are told not to consume red meat (Beef, veal, pork, lamb) that is why this month I offer you this delicious and easy recipe, whose preparation time takes us between 20 and 30 minutes :
What do we need?
4 Fish Fillets Tilapia, Catfish, Salmon etc. 150 grams to 200 grams each
1/2 red bell pepper
1: 2 green bell pepper
1/2 red onion
1 teaspoon salt
1/4 of teaspoon of pepper
1/4 of teaspoon of oregano
1 clove garlic
1 yellow lemon
8 basil leaves
2 tablespoons of olive oil
4 sheets of aluminum foil measuring 30 x 27 cm.
4 sheets of 30 x27cm waxed paper.
Accompany with white rice
Preparation of seasoning oil:
In a small bowl we pour two tablespoons of olive oil, add the salt, ground black pepper and oregano, preferably dry and ground, take a garlic and crush it until it becomes a fine paste, which we add to the ingredients to mix them perfectly until obtaining a smooth consistency similar to mayonnaise.
In another bowl we pour the vegetables 1/2 red bell pepper
1/2 green bell pepper cut into approximately half a centimeter julienne strips, half a red onion cut into a fine feather, we add half the seasoning oil to these vegetables, the other half is reserved for the fish, It is mixed ensuring that the seasoning oil penetrates in all the vegetables and reserve.
Take a sheet of Aluminum foil and put it next to the baking paper, this sheet should be on the aluminum foil, these two sheets measure approximately 30X30 Cm, On these sheets place the mixed vegetables so that they combine their flavor, You must make 1 "bed" of vegetables for each fish fillet, on the fillet using a kitchen brush, smear the seasoning oil observing that the fillet is well covered, then, on the fillet, put two slices of lemon and two basil leaves NOTE: If you don't like basil, you can substitute coriander or parsley, or experiment with Greek bay leaves.
Once this step is done, repeat it with the other three fillets, make a small package with the ingredients and reserve the four packages.
IMPORTANT: THIS PREPARATION WILL RELEASE LIQUID, SO EACH OF THE PACKAGES MUST BE PERFECTLY SEALED.
Preheat the oven to 200 ° C for ten minutes before introducing the fillets, which will be ready between 15 and 20 minutes depending on the intensity of the oven
TRICK:
Has it happened to you that your oven does not work and you don't know why and you have this recipe? DO NOT WORRY, ASK THE CHEF!
Take a dry saucepan, put it on the stove burners, wait for it to heat up and put the package on it, observe that in ten minutes the natural steam of the fillet begins to inflate the package, when you observe this, turn it over so that the cooking is Even on both sides, the fire should be controlled to medium or medium / high, wait five minutes and remove it from the heat and let it rest.
serve them by cutting the package in half with a knife or scissors, accompany it with white rice and a good white wine.
