HOMEMADE CHEESE
This cheese is made with only two ingredients and can be used in the preparation of sweet dishes and savory dishes, the two ingredients are:
1.5 Liters of fresh Pasteurized Milk (Do not use fresh milk of high pasteurization or of the light call)
1 lemon juice (approximately 45 ml of lemon juice)
Optional salt to taste
Lemon juice can be substituted for vinegar, but the consistency, as well as the flavor of the one I have made, is better with lemon juice.
Process:
Put the milk to heat up to 90 ° C, if you do not have a thermometer, calculate that the milk does not boil.
Once the temperature is reached, the heat is turned off and the lemon juice is poured in and mixed perfectly with a spoon, observing that the milk immediately begins to cut.
cover the container where we heat the milk and let it rest for 30 minutes
When half an hour has passed, we take a Bowl, with a strainer and cheesecloth, if you do not have cheesecloth, a clean cotton cloth will do perfectly.
We observe that the mixture is already separated from the whey and the cheese curd, using a spoon, we pour the cheese curd on the clean cloth, separating it from the milk serum. Note: The milk must be fresh and not about to expire, the fresher the milk the better results will be obtained. A perfect milk to make cheese is raw direct milk from the cow.
The result of this procedure is a neutral cheese, ideal for sweet or savory recipes.
When we pour the total cheese curd we can decide whether to add:
Salt, if we want a salty cheese
Slices of Ham; If we want a cheese for Spanish tapas
Sausages or Bacon
Hot peppers, for Mexican recipes
Having decided the use that we will give the cheese, we will cover it and take it to the refrigerator for 6 hours so that it continues to drain the whey that has remained and until we achieve the consistency we want for the use we have planned for it, being this more creamy or harder. For this I recommend checking it every two hours.
After 6 hours we observe the residue of the whey inside the bowl, The cheese is already ready in the cheese cloth and can be consumed already or you can reserve it on a plate or a topper with the figure that you like the most.
Note: Neutral cheese lasts up to 3 days in the fridge.
Salted cheese can last up to 1 month depending on the speed of its consumption.
Sweet cheese can last up to 3 days in the refrigerator.
