FISH FILLETS IN BEAR PASTE


This recipe was taught to me by my grandmother and is obviously on the menu of our restaurant. Traditionally, this type of breading was introduced by Portuguese sailors to Angola, so this recipe can be tried in the markets and street restaurants in Luanda. the following is required: 2 cups of wheat flour, sifted 2 egg yolks 1 teaspoon salt 1/2 teaspoon black pepper (it must be black, as cayenne pepper can cut through the preparation) 1/2 teaspoon garlic powder (can be substituted for very finely chopped garlic or very finely chopped onion) 1/2 teaspoon dried parsley 1 regular beer and a quarter Process: Sift the two cups of arina perfectly using a strainer and a spoon inside a bowl Then we add the two egg yolks, in another bowl we mix the salt, black pepper, garlic and parsley. When these ingredients are perfectly mixed, they are immediately added to the yolks and wheat flour, they mix perfectly and at that moment we add the beer little by little. (Do not pour all the beer, go regulating the amount until you obtain a paste of the desired consistency, which can be compared to the paste used to make Hot Cakes, depending on the beer, you can use a beer, a beer and a quarter or even a beer and a half) Everything is mixed either with a kitchen balloon or a fork. It may happen that you go overboard with the amount of beer, this is normal, to solve it, you can add more wheat flour. The recommended fillets for this preparation are the following: Merlusa fillet Lisa philate Catfish fillet The highly recommended steaks are: Tuna steak Salmon fillet Sardine. Before frying, if you have an electric fryer, preheat the oil to 375 ° F Approximately 190 ° C IMPORTANT Before frying the pieces, dust them perfectly in wheat flour. Once this is done, proceed to fry the fillets for between 3 and 4 minutes per fillet. It should be very golden and of a pleasant color. EMPLATED: Serve the fillets on a plate accompanied by 50 gr. mayonnaise with chopped coriander, sliced tomato, lettuce.
